Optional:

  • 8-10 shrimp, peeled and deveined
  • 1 chicken breast, sliced
  • 1 cup of tofu, cubed


Instructions:

  1. In a large pot, add the water or chicken broth and bring it to a boil over medium-high heat.
  2. Add the lemongrass, kaffir lime leaves, and galangal. Let it simmer for 5 minutes to allow the flavors to infuse.
  3. Add the chilies, garlic, onion, and tomatoes. Let it cook for another 5 minutes or until the vegetables are tender.
  4. If you're adding protein, such as shrimp, chicken, or tofu, add it now and let it cook until it's no longer pink.
  5. Add the mushrooms and let it cook for another 2-3 minutes.
  6. Turn off the heat and add the fish sauce and lime juice. Stir well.
  7. Garnish with cilantro leaves and serve hot with steamed rice.
